Instructions
1. Prepare the pancake batter
In a large bowl, mix the yogurt, egg, sugar, vanilla extract, and a pinch of salt until smooth.
Add the sifted flour and baking powder. Mix gently to avoid lumps.

Grate the apple or finely chop it. Fold it into the batter. If you like spicy flavors, add a pinch of cinnamon.
3. Cook the pancakes
Heat a non-stick frying pan over medium heat and add a small knob of butter or a drizzle of oil.
Pour a small ladleful of batter into the pan and spread it lightly to form a pancake.
Cook for about 1 minute on each side, or until the edges are golden brown and bubbles form on the surface.

Continue until all the batter is used up, adding a little more butter or oil to the pan if necessary.
