Buttermilk Coconut Cake
1. Preheat the oven
Preheat the oven to 140°C (top/bottom heat). Lightly grease a baking sheet or line it with parchment paper.
2. Prepare the batter
In a large mixing bowl, combine the eggs, sugar, buttermilk, flour, and baking powder. Beat with a hand mixer until smooth and airy.
3. Fill the baking sheet
Spread the batter evenly onto the prepared baking sheet.
4. Prepare the topping
Mix the shredded coconut and sugar together, then sprinkle evenly over the batter.
5. Bake
Bake for about 30 minutes, until lightly golden. Check doneness with a toothpick.
6. Add the cream
Immediately after baking, pour the cold whipping cream evenly over the hot cake. Allow the cream to soak in fully.
7. Cool and serve
Let the cake cool completely before cutting into pieces.
